If there is something I cannot give up, no matter what health journey I am currently undertaking, is cheese. Cheese is a staple in my diet. I love them all, smoked gouda, goat cheese, cream cheese, but my number one favorite is brie. For those of you who have never heard of brie cheese…let me enlighten you. Brie is a soft cheese originating from the Brie region of France, hence the name. This cheese has a creamy texture and rich, buttery flavor. It is made from cow’s milk and the soft part of the cheese is covered by an edible white rind that adds a slightly earthy taste to the cheese.
Brie cheese is very versatile and can be enjoyed both sweet and savory. Brie can be eaten on its own, paired with fruits and nuts, honey, or jam for more of a sweet treat. For our savory lovers, brie can be eaten with turkey, avocado, tomato, or all three on a toasted ciabatta. To keep things light, calorie-wise, I like to enjoy sliced-up brie, with a thick slice of tomato, and chopped arugula, on a toasted ciabatta. With this filling recipe, you’ll be able to indulge in a tasty lunch, all under 400 calories. Here is everything you’ll need to put this baby together.

Brie
Ingredients:
- 1/2 of a Ciabatta
- Brie Cheese
- 1 Beef Steak or Heirloom Tomato
- Arugula
- Balsamic Vinegar
- Olive Oil
- Salt
- Pepper

Let’s start with the assembly process. First, preheat the toaster oven or a regular oven. I have a “toast” switch on my toaster oven so I adjust to that setting but you can also toast the sandwich in an oven at 400°F. While that’s preheating, let’s slice up your ciabatta open. Then get out the brie cheese, the cutting board, and the cheese knife. Run the cutting knife under hot water so it slices through the cheese smoothly. Cut the cheese wheel in half, then from the inside out of one half, thinly slice a few cuts of the cheese. I usually slice thin and aim for just a serving or a serving and a half. Take out your baking/ toasting tray and cover it with a baking sheet. I then lightly mist some cooking spray. Next, you’ll need to lay the sliced open ciabatta on the baking sheet soft side up. Lather the cheese on the bottom slice of the bread. Then pop the tray into the toaster for about 4 – 6 minutes or until the cheese has melted. Carefully take the tray out with an oven mitt. Your brie on toast should look something like this:
While it toasts, roughly chop up your washed arugula and slice your tomato into thick slices for more juice. I usually use heirloom tomatoes but beef steak tomatoes work great as well. Once your toast is out of the oven and your greens are cut, layer the tomato slices on top of the melted brie cheese. Top with some chopped arugula, add salt and pepper, and a drizzle of olive oil. I like to drizzle a bit of olive oil on the arugula and the inside of the top ciabatta half. Before closing the sandwich, drizzle a tablespoon of balsamic vinegar on the arugula and the inside of the top ciabatta half. I recommend the Boticelli Balsamic Vinegar. Finally, close up your sandwich, plate it, get yourself a drink, and enjoy!
