Typically, every weekend, I go to one of my favorite grocery stores either in the neighborhood or on my way back from pilates. Like most people, I have my weekly grocery list on my phone, in my notes list, ready to go. Ever since Logan popped up on the TikTok scene with his icon cucumber salads…you know we had to try it. So this past week, we went on our haul.
This post is all about lunch made easy with 7 items in this week’s grocery haul.
Grocery
Now we don’t need to get into the entire grocery items list this week. Specifically, we are zooming into the large cucumbers, dill, and lemons. You will also need a few more items. I happened to have some of these items already so I put together the full ingredient list to make this easier for everyone.
Ingredients:
- 1/2 Large English Cucumber
- 1 – 2 Tablespoons of Low Fat Creamcheese
- 1 Tablespoon of Capers
- 1/2 an Avocado
- Dill
- 1/2 Lemon
- Salt & Pepper
Let’s start by washing and drying the produce. Let the dill dry on a paper towel and dry off the cucumber, lemon, and avocado.
1. Organic English Cumcumbers
We start the salad with a large English cucumber. I like to peel them but you are welcome to leave the skin on. Cut the cucumber in half right down the middle widthwise to create two halved cucumbers. Then slice 1/2 of the English cucumber for one serving. You can prep the other half for your next batch. English cucumbers are low in calories and easily accessible. Whether doing a grocery delivery or going to your local supermarket, you’ll be able to stock up on some English cucumbers.
2. Low Fat Cream Cheese
The next item you need is some low fat cream cheese spread. Since I am in a calorie deficit, I go for the low fat cream cheese because it’s only 70 calories for 2 full tablespoons of cream cheese. Depending on how thick and rich I want my salad, I will add 1 or 2 tablespoons of the Organic Valley Neufchatel Cheese Spread into the mix. 3. Capers
Capers are my absolute favorite. I always have capers in my fridge. Most likely, I got these Goya Capers from my local keyfood. However, I linked an Amazon link above, for Organic Capers by 365 Whole Foods Market. I add an entire tablespoon of capers to this cucumber, avocado, and cream cheese blend. Some people might find that too salty so eyeball it to your liking.
4. Dill
Once the dill is dried off, get out your kitchen scissors and cut the dill right into the bowl. I try to cut it as finely as possible. However, I do add in a lot of dill. There is something about the combination of finely chopped dill and thick whipped cream cheese that makes my mouth water.
5. Avocado
Next, you take a ripe avocado and slice it down the middle. You only need half the avocado for one serving so store the other half, tightly sealed in your fridge for the next batch.
Take the ripe half and mash it into the bowl with the capers, cream cheese, and dill. At this point, you can also add the sliced English cucumber. Start combining these ingredients lightly.
6. Lemon Juice
Cut the lemon in half and squeeze the juice of 1/2 of the lemon straight into the salad mixture. Add sea salt and pepper. Mix the entire salad. Logan uses these deli restaurant containers to shake the entire salad together but you can also mix it with a large spoon. Mix the salad until there is a creamy consistency.
This salad is so freaking good! I have been eating this for weeks now. My coworkers know about this salad because of how much I rave about it. Best of all, this entire salad is around 320 – 350 calories per serving.
7. Low Calorie Drink
Our easy-made lunch is not complete without a refreshing drink. Today’s choice is the Swoon Zero Sugar Sweet Tea. Swoon is a healthy soda alternative and it tastes amazing! I love to Amazon order these in bulk.
